Our family recipes are passed down from generation to generation, beginning at the birthplace of Roman cuisine - Amatrice. All the flavors, from the Tyrrhenian sea to the Umbrian-Marchigiano Apennine, masterfully combined by our historic chef Ezio Vitullo.

Our guaranteed origin meat is hand-selected from the award-winning butcher shop “Sartor”. The fish is delivered fresh every day from the best fish shops in Rome.
Over the years, we've became friends with local farmers thanks to a single shared philosophy: respect for nature.
The philosophy behind our wine list is the will to educate people on healthy drinking. Valerio, the youngest of the Salvi third generation is a graduated AIS sommelier. His selection offers more than 100 labels of wine, with particular attention to the organic wine and its non-invasive to the environment techniques of production.
